
Cranberry and Nut Mini Cornbread
Description
The recipe won't take much time. This mini bread with cranberries can make a great snack for your New Year's table. The vegetable fat gives the mini bread a nice texture and makes the crust crispy. Serve chilled.

1. Preheat the oven to 200 degrees. In a large bowl, mix cornmeal, flour, salt, and baking powder.

2. In a separate bowl, mix buttermilk, milk, egg, and baking soda. Combine the milk mixture with the flour mixture.

3. Add the melted vegetable fat and mix well.

4. Add vanilla extract, dried cranberries, and chopped pecans.

5. Pour the mixture into a greased mini loaf or muffin pan. Make sure the cranberries are evenly distributed in the batter in each compartment of the pan.

6. Bake the bread for 12-15 minutes until golden brown. Let it cool for a few minutes after removing from the oven, then remove from the pan and allow to cool completely.

7. To make maple butter, mix softened butter with maple syrup. Serve warm bread with maple butter. The butter can be prepared in advance and stored in the refrigerator.
