
Cheddar Cheese Corn Muffins
Description

1. Preheat the oven to 220 degrees. Generously grease a 12-cup muffin tin with olive oil and set aside. In a small bowl, combine flour, cornmeal, sugar, baking powder, salt, and baking soda.

2. Make a well in the center of the flour mixture. Add the egg, buttermilk, melted butter, corn, and chopped onion. Mix until smooth.

3. Then add the grated cheddar cheese and mix well.

4. Spoon the corn batter into the prepared muffin tin. Place the tin in the preheated oven and bake for 10–15 minutes, until golden brown.

5. Remove the finished muffins from the oven, leave them in the pan for several minutes, then take them out of the pan and cool on a wire rack. Serve the muffins with melted butter. Muffins can be stored in an airtight container for up to three days.
