Description
The pastry is easy and quick to make. Today we’ll make gluten-free corn tortillas using only corn flour. The method is simple, but there are a few nuances. You can serve these tortillas with soups, or with vegetable salads, or with tea or coffee. Serve warm or chilled. Perfect with tea.

Prepare cornmeal and water for the flatbreads.

Now here’s an important point: for the cornmeal to work, you must add hot water—almost boiling—in small increments.

First mix the dough with a spoon, then knead it by hand. The dough becomes very soft and elastic. Leave the dough in the bowl to rest for 60 minutes.

Working with this dough is difficult—it falls apart and does not hold its shape, so you need to roll the dough between two layers of parchment paper.
