
Corn Cookies with Butter

This recipe won't take much time. Tender, fragrant corn cookies with butter are a simple treat with a pleasant flavor and a light, crispy texture. They come together quickly from everyday ingredients and pair perfectly with tea or coffee. If you need to avoid gluten, you can make the cookies entirely with corn flour or mix it with any other gluten-free flour: rice, amaranth, or flax. Serve with tea or coffee.

Prepare the ingredients for making cookies. Molasses can be used instead of honey. Add sugar to taste, reducing or increasing the amount as you like. To flavor the dough, you can add vanilla extract or zest.

Take the butter out of the refrigerator ahead of time so it softens. In a bowl, combine the softened butter and sugar. Beat the mixture with a mixer.

While continuing to beat, add the liquid honey to the butter mixture. If your honey is thick, melt it in a double boiler or in the microwave for 30 seconds and let it cool.

When the honey is fully incorporated, add one egg. Beat with a mixer until fully combined. The mixture should become light, glossy, and smooth.

Combine the flour and baking powder and sift through a sieve. Combine both mixtures, add the salt, and knead the dough. Do not mix the dough by hand for too long, or the butter will start to melt from the heat of your hands. Alternatively, use a silicone spatula.

Cover the prepared dough with plastic wrap and refrigerate for 30 minutes. Prepare a baking sheet. Line it with parchment paper or use a silicone baking mat. Divide the dough into 40–50 g pieces and roll into balls. Dip one side of each piece in granulated sugar and place on the baking sheet.

Place the baking sheet with the cookies in an oven preheated to 180°C. Bake for no more than 15 minutes so the cookies do not dry out.
