
Corn seasoning
Description
Minimal ingredients—great result. Fill a medium pot with water and bring to a boil. Add corn and cook for about 4 minutes. Transfer the corn to a plate and let cool. Pour out the water from the pot, leaving only 3 cups. Using a sharp knife, cut the kernels off the cobs. You should get about 3 cups of kernels. Add vinegar, sugar, turmeric, mustard powder, mustard seeds, salt, and bay leaf to the pot. Bring to a boil over medium heat. Add cabbage, red pepper, onion, and corn kernels; stir well. Bring to a boil, then immediately remove from heat and let stand for 5 minutes. Separate the liquid and vegetables into two bowls. Let cool, then remove the bay leaf. Once the liquid has cooled, strain it through a fine sieve into the bowl with the vegetables. Serve the relish chilled or at room temperature. Store in an airtight container in the refrigerator. Serve chilled or at room temperature.
