1. To begin, you need to choose the cobs correctly so that corn stored for winter without sterilization at home does not turn out tough. It is best to use fresh, recently picked cobs so the corn is not starchy. The cobs must be thoroughly cleaned and washed well.

2. Place the cobs whole in a deep pot and cover with hot water. Bring to a boil over high heat and blanch for about 3 minutes. Transfer the cobs to a colander and cool under running water (you can also place the corn on ice).

3. Cool, slightly dried cobs can be placed in a jar. If desired, you can prepare the corn as kernels only, like the kind sold in stores. To do this, cut off the kernels with a sharp knife.

4. For one small jar—and you probably won't need more than that for a single dish—use 3 medium cobs. Pack them into the jar fairly tightly. Pour boiling water into the jar and leave for 10–15 minutes with the lid closed.

5. Then drain this water and bring it back to a boil again. Pour the corn over again for about 10 minutes the second time. Meanwhile, prepare the marinade. For 1 liter of water you will need 2 tablespoons of vinegar and sugar and 1 of salt. Pour the boiling marinade over the corn, having first drained the water. Seal the jars and leave them under a blanket until completely cooled. That is the entire recipe for preparing corn for winter without sterilization. Cobs are preserved the same way.
