
Bacon and cheese covered pie
Description
The recipe won't take much time. A delicious and simple pie, brought from the shores of the Mediterranean. The pastry is ready. Serve at the table.

Step 1

Lightly sauté 200 g of bacon pieces in 1 tablespoon of olive oil. They should not be overcooked, as they will continue to cook in the oven. Let cool.

In a bowl, pour: 250 ml of warm water, 10 g of coarse salt, 50 ml of olive oil, then 30 g of rye flour and 500 g of flour, and finally 20 g of yeast. Knead for 6 minutes at low speed.

Roll the dough into a ball, cover with a damp towel, and let rise in a warm place (about 1 hour). Then cut the dough into 2 pieces. Roll one piece into a large rectangle.

Place a quarter of the bacon on half of the rectangle. Then cover with grated Comté cheese. Make 3 slits with a sharp knife on the other half. Moisten the dough around the bacon so that it sticks well.

Fold the dough, seal the sides.

Add another quarter of bacon on top, and sprinkle with grated Comté cheese. Place on a baking sheet. Repeat the same process with the remaining dough and let rise in a warm place for one hour. Preheat the oven to 240°C.
