
Turkey wings with gravy
Description
Like chicken wings, turkey wings should be divided into 3 parts, removing the smallest one. Do not discard it—use it to prepare gravy (the same can be done with chicken wings). Roast the remaining turkey parts in the oven or fry them in a skillet. Serve the meat immediately after cooking.

1. Wash the turkey wings and, using a sharp knife, cut each wing into 3 parts.

2. Set aside the outermost, smallest portion. Place the remaining turkey pieces on a baking sheet, season with salt and pepper, mist with vegetable oil, and cover with foil. Put into a preheated oven at 140 degrees for 2.5 hours.

3. Heat 2 tablespoons of vegetable oil in a saucepan, heat it up and add the chicken wings. Fry them on all sides until golden brown.

4. Dice the carrots, onion, and celery, and add the vegetables to the pot with the wings; sauté for a few minutes.

5. Pour water into the saucepan, bring to a boil, and simmer the broth covered for the same amount of time it takes to bake the wings.

6. Strain the ready broth through a fine sieve, discard the vegetables.

7. Place the butter in a saucepan and melt it, then add the flour.

8. Whisk everything thoroughly with a whisk and let it sit for a few minutes.

9. Pour the entire broth into portions, mix well, then add mustard, thyme, cream, salt, and pepper to taste. Cook the sauce for a few minutes.

10. Remove the wings and take off the foil, bake them for another 5-10 minutes.
