Description

This fairly simple recipe for gooseberries in syrup takes quite a bit of time, but the result is well worth it! Tender gooseberries in sugar syrup make a wonderful addition to tea or desserts. It's a delicious and healthy preserve that both children and adults will enjoy.

Instructions

    Step 1

    Step 1

    1. The process of preparing gooseberries should begin by thoroughly washing the berries and removing the stems. It is quite convenient to do this with small scissors. Once all the berries are cleaned, they should be rinsed thoroughly under running water once again and well dried.

    2. Next, each berry needs to be pricked in 3-5 places using a needle or toothpick (depending on the size). This will prevent the berries from bursting during cooking, so the gooseberries in syrup will retain their shape when prepared at home.

  3. 3

    Step 3

    3. When the berries are ready, you can start making the syrup. To do this, place sugar and water into a deep saucepan (one large enough to later fit the gooseberries). Bring to a boil, stirring occasionally to dissolve the sugar.

    4. When the syrup comes to a boil, remove it from the heat and add the berries. Gently stir and let it sit for 3–5 hours (or overnight) so the berries can infuse and absorb the syrup thoroughly. How to make currants in syrup even more aromatic? You can add well-washed and dried raspberry or blackcurrant leaves to the syrup, for example. This will add a special flavor note.

    5. After some time, drain the syrup and bring it to a boil, then pour it over the berries again and let them sit. For the third time, bring the syrup to a boil, pour it over the berries, and place them over heat for about 10 minutes.

  6. 6

    6. Do not boil the gooseberries for too long, as they will lose their shape and turn into jam. While still hot, pour them into sterilized jars and seal. That's the entire recipe for preparing gooseberries in syrup.
