Instructions
- 1
Step 1

Prepare the ingredients.
- 2
Step 2

First of all, make the custard. For this, take a saucepan, add vanilla sugar to the milk, heat until it reaches a boil, but do not let it boil.
- 3
Step 3

Mix the egg, starch, flour, and sugar.
- 4
Step 4

Pour the warmed milk into the egg mixture and stir.
- 5
Step 5

Pour the milk‑egg mixture back into the saucepan, heat until thickened.
- 6
Step 6

Strain the cream through a sieve to remove any lumps, if there are any.
- 7
Step 7

Cover the cream directly with plastic wrap and chill.
- 8
Step 8

Now move on to baking the croissants. Roll out the dough into a rectangular sheet, cut it into triangles.
- 9
Step 9

Make a small incision at the base of the triangle.
- 10
Step 10

Fold the corners of the dough and start rolling from the base of the triangle toward its tip.
- 11
Step 11

Gently bend the croissant into a crescent shape.
- 12
Step 12

Place the croissants on a baking sheet, brush them with milk.
- 13
Step 13

Bake the croissants for 15–20 minutes in an oven preheated to 200 °C.
- 14
Step 14

Slightly cool the croissants and make a horizontal cut on the side with a sharp knife.
- 15
Step 15

Transfer the pastry cream into a piping bag and fill the croissants with the cream.
- 16
Step 16

If desired, you can add fresh berries to the cream. I added a bit of frozen currants, which really brightens the flavor. The croissants turned out simply wonderful, tender and tasty.
