In Italy, croissants are called “cornetto,” baked from a tender dough, flaky and airy, with a delicate vanilla aroma. Cornetto with cappuccino – bravissimo! While the croissants are warm, dust them with powdered sugar and serve them at the table. So, let's start with the pre-ferment. Mix the yeast with room‑temperature water and flour.

Add the remaining flour and knead the dough.

In a separate bowl, mix the sugar, milk, and eggs.

Mix the milk mixture with the flour mixture. Knead a soft dough.

Place the dough in a bag and spread it into an even thin layer across the bag, so that it forms a square. Put the dough in the refrigerator for 10 hours.
