Description

Homemade pastries for tea. We often make croissants with fillings, but here it's completely unnecessary, as the combination of two types of dough—flaky light and yeasted dark—turns the croissants into a delicious and original dessert that needs no additions. These croissants are quite easy to prepare; any recipe will work. Serve with tea or coffee.

    Prepare all the necessary ingredients.

    Mix the flour and cocoa, and add the fast-acting yeast to the center.

    In a separate bowl, melt the butter (I melt it in the microwave at maximum power for 30 seconds).

    Add warm milk and sugar to the butter and stir.

    Pour the milk-butter mixture into the dry mixture, add honey and a pinch of salt.

    Knead a soft dough. Knead for at least 10 minutes. Then transfer the dough to a deep bowl and place in a warm spot to rise for at least one hour, but preferably for 2–2.5 hours. It is very convenient to let the dough rise in a multicooker using the special dough-rising mode or the "Multicook" mode (temperature set to 35°C).

    When the dough has risen, start shaping the croissants. Roll out the puff pastry and cut a circle from it. Roll out the yeasted brown dough into a circle of approximately the same diameter. Place one circle on top of the other and cut into segments. I flipped some segments upside down so that in some croissants the white dough would be on top, and in others—the brown one.

    Roll the dough, shaping it into a croissant.

    Leave the croissants on the baking sheet for 30 minutes to rise, and meanwhile preheat the oven to 180 degrees. Bake the croissants for 15-20 minutes.
