
Crescents with kefir

1. Mix the warm milk (about 100 g of milk) with yeast, add sugar and salt, and let it sit for about five minutes. Melt margarine or butter in a saucepan. Beat an egg into the melted butter, then add the milk with yeast to the kefir, add flour, then pour in vegetable oil and knead the dough. The dough should easily come away from your hands.

2. Cover with plastic wrap and refrigerate for about an hour. You can skip refrigeration and start rolling out the dough immediately.

3. Prepare the filling. Mix the cottage cheese with sugar, add the egg, sour cream, a little starch, and mix everything thoroughly.

4. Roll out the dough into a thin layer, spread the filling over its surface, and cut the dough into eight sectors. Roll up each sector from the base to the tip, then fold it into a crescent shape.

5. Repeat this with all the croissants, then place them on a baking sheet. Brush the croissants with egg yolk mixed with sugar. Bake in the oven at 200 degrees Celsius for fifteen to twenty minutes.
