
Classic croissants

Perfect for tea and coffee. At first glance, it might seem that classic croissants are incredibly difficult to make, and it's easier to just buy them at the store. But today I'll prove to you that preparing classic croissants is very simple using easily available ingredients. I'll be making plain croissants, but you can add pieces of chocolate, your favorite jam, or fruits. The baked goods are ready. Serve them at the table.

Prepare all the necessary ingredients. Note: all ingredients for the dough must be cold, so place a glass of water in the refrigerator in advance, and do not take out the other ingredients ahead of time.

Dissolve fast-acting yeast in milk.

Then add the egg, a little salt, sugar, and water. Mix everything together.

Start sifting the flour into the liquid and knead a soft dough.

The dough should be soft, yet elastic and not sticky to the hands.

Now shape the dough into a square, wrap it in a bag or plastic wrap, and refrigerate for 2 hours, or preferably overnight.

Meanwhile, take the butter out of the refrigerator and, while it is still very cold, grate it on a coarse grater. Then return it to the refrigerator until the dough is ready.

Remove the dough from the refrigerator, roll it out into a square 3 mm thick. Place half of the grated butter in the center.

Wrap the dough like a envelope, but with an overlap. Try to work as quickly as possible so that the butter and the dough itself don't have time to warm up from your hands.

Now roll out the dough into a rectangle. Note: the rectangle should be three times longer than its width. Place half of the remaining butter in the center.

Fold the rectangle in thirds again. Place the dough in a bag and refrigerate for 30-40 minutes.

Take the dough out of the refrigerator, roll it out again, moving the rolling pin in one direction. Place the remaining butter in the center.

Fold the dough into a envelope shape again. Place it in the refrigerator for at least 30 minutes, although it can be stored longer. Our puff pastry is ready. You can make a large batch and freeze it.

Remove the dough from the refrigerator. Roll it out into a rectangle or square shape, 2-3 mm thick.

Make a small cut at the base of each triangle. Brush the triangles with beaten egg.

Roll the croissants, stretching the base. Place the croissants on a baking sheet and brush them with beaten egg. Let them rise in a warm place for 1.5–2 hours. Then bake in an oven preheated to 200°C for 30–40 minutes. All ovens bake differently, so monitor the situation. Once the croissants develop a golden, crispy crust, remove them from the oven.
