
Crescent rolls with Provencal herbs

Prepare the ingredients. Let's get started!

Dissolve the yeast in a small amount of warm milk, let stand for 5-7 minutes.

Pour in the remaining warm milk (temperature no higher than 40 degrees to avoid killing the yeast), add the egg, salt, and sugar. Mix well.

Add the flour in parts, knead the dough.

During kneading, add 20-25 g of melted butter.

Knead the dough well; it should be non-sticky, yet soft and pliable. Cover with a cloth and let it rest in a warm place for 1 hour.

When the dough has risen well in volume, you need to press it down with your hands. It should be soft, warm, and airy.

Divide the dough into portions and roll each into a ball. The number of portions is up to you—it will only affect the size of the croissants. I divided it into 11.

Grease the work surface with vegetable oil. Roll out each ball so that one side has an elongated edge, and cut the other side as shown in the photo. Brush the flatbread with vegetable oil on both sides, sprinkle with Provencal herbs on the inside.

Roll the croissant. It's easy to do: take the cut ends with both hands, gently pull them in opposite directions, then start rolling the croissant. Then simply bend it into the desired shape. This shaping method will help it hold its form well.

Place the crescent rolls on parchment paper, spacing them apart. Brush with egg yolk and sprinkle with sea salt, Provence herbs, and mustard seeds.

Bake at 250 degrees for about 15 minutes.
