Crostini with Squash and Ricotta

Description

A delicious appetizer for any gathering. Crostini is a traditional Italian appetizer consisting of pieces of toasted bread with a variety of toppings. The appetizer is ready. Serve immediately.

    1. Peel the squash, remove the seeds, and cut into 1 cm cubes. Preheat the oven to 220°C. Toss the squash, 2 tablespoons olive oil, and sugar on a baking sheet. Season with salt and pepper. Spread the squash in a single layer. Roast, stirring occasionally, until golden and the squash is tender, 23–30 minutes. Let cool.

    2. Heat 1 1/2 tablespoons butter in a small skillet over medium heat. Add the sage and cook until the edges begin to curl and turn dark green, 1–2 minutes.

    3. Place the fried leaves on a paper towel to dry.

    4. Mix the ricotta cheese and finely grated lemon zest in a small bowl. Season with salt and pepper.

    5. Using a brush, brush both sides of the baguette slices with 2 tablespoons of olive oil. Fry in a skillet over medium heat or in the oven for 1 ½–2 minutes on each side until golden brown. Rub each bread slice with a clove of garlic.

    6. Spread 1 tablespoon of the ricotta mixture onto each crostini. Spoon the squash cubes on top. Drizzle the crostini with lemon juice and olive oil. Sprinkle with salt and pepper. Garnish each crostini with 2 fried sage leaves.
