
Plum Crostata
Description
Homemade pastry for tea. You can make crostata both for a family tea party and for when guests arrive. The pastry is very juicy, tender, aromatic, and delicious. It will leave no one indifferent. You can use any fruits, or replace them with thick preserves or jam. For the pie in this recipe, give preference to firm plums, but if they are not very tasty, that is not scary at all. In baking, plums will reveal themselves in a very special way! If desired, you can add almonds or cinnamon to the filling.

Prepare all the ingredients.

In a deep bowl, combine the flour, salt, sugar, cubed butter, and egg yolks.

Mix everything first with a spoon, then rub it into crumbs with your hands and add cold water in portions, 1 tbsp at a time; once the dough comes together into a ball, it is ready. Divide the dough into 2 unequal parts. Leave one part, about 2/3, for the base, and put the other 1/3 in the refrigerator for now.

Roll out the dough to fit the size of the pan on a floured surface. Carefully transfer it, shape the edges with your hands, and prick the bottom with a fork.

Rinse the plums well, cut them in half, remove the pit, and then slice them into wedges.

Add sugar and starch to the plums. Mix and place the filling onto the dough in the pan.

Now take the remaining dough out of the refrigerator and roll it out thinly. Cut it into strips (you can use a fluted pastry cutter) about 1–1.5 cm wide, and decorate the top of the pie with them as in the photo. Bake the pie in the oven at 190 degrees for about 30–40 minutes.

Let the finished pie cool slightly, then cut it into portions and serve.
