
Cherry crostata
Description
The baked good comes together easily and quickly. Fans of shortcrust pastry will enjoy this crostata. A juicy cherry filling with crisp shortcrust pastry. If you want the pastry softer, put the crostata in a pot with a lid. The pie is very easy and quick to make. Fresh or frozen cherries both work. You must make the cherry filling with a thickener—starch or agar-agar. If you simply spread cherries with sugar on the dough, they will release a lot of juice while baking and the crostata will look unappealing. Very tasty baking—highly recommended.

Prepare the ingredients for making cherry crostata.

Place the soft butter in a bowl.

Add powdered sugar.

Pour the flour into the bowl.

Using a fork, mix the butter, powdered sugar, and flour until the mixture forms crumbs.

Add cold water and knead until you have a soft dough that does not stick to your hands. Chill it for 30 minutes.

Meanwhile, prepare the cherry filling for the crostata. Place the pitted cherries in a saucepan or skillet. Add sugar to taste.

Heat the cherries with sugar and stir until the sugar dissolves. Then dissolve the starch in 2–3 tablespoons of cold water and pour it into the cherries. Stirring constantly, cook the cherry filling until thickened. Afterwards, cool thoroughly.

Take the dough out of the refrigerator and divide it into two unequal parts. Roll out the larger part and place it in the baking tin. My tin is 20 centimetres in diameter.

Spread the cherry filling on the dough.

Roll out the second portion of the dough and cut it into strips 1–1.5 cm wide. Arrange the dough strips over the filling in a lattice.

Bake the crostata in the oven at 175–180°C for 25–30 minutes.
