
Rabbit in sour cream
Description
This sour cream rabbit recipe is simply delicious. Cooking time varies depending on the meat used and the desired tenderness. You can marinate the rabbit beforehand using white wine and herbs. This dish will still be perfectly edible even on the second day.

1. The rabbit carcass is cut into portion-sized pieces. The bones can be separated from the meat and discarded, using only the fillet for cooking.

2. Heat oil in a skillet and sear the meat pieces on all sides. The heat should be high, and the meat should be seared until a golden-brown crust forms. Then, transfer the meat into a heavy-bottomed pot.

3. In the pan where we fried the rabbit, sauté the previously sliced onion. Then grate the carrot on a coarse grater.

4. Then the meat should be salted, topped with onions, and a few pink peppercorns added.

5. Place the carrots on the onions, pour sour cream over them. Add approximately 250 ml of broth or water, add marjoram, cover with a lid, and simmer over low heat.

6. Simmer over low heat for 1 to 1.5 hours. The meat should become tender and soft. Check for salt seasoning. While the rabbit is simmering, cook rice for the side dish in salted water. Basmati rice goes perfectly with rabbit in sour cream. Place the meat pieces over the rice, generously pouring with sauce.
