
Rabbit in the microwave
Description
The recipe itself is quite simple; the most important thing is to prepare the rabbit in advance. The longer the meat marinates, the more tender and soft it becomes. Ideally, I recommend marinating the rabbit overnight, but if you're short on time, leave it for at least a couple of hours. I cook mine in a 1.5-liter casserole dish, but if you have smaller individual pots, divide the ingredients between 2 or 3 of them. You can also cook the rabbit with vegetables in a roasting bag—just make sure to poke several holes in it with a toothpick to let steam escape. Besides the vegetables listed, you can add young zucchini, pumpkin, bell peppers, broccoli, eggplants, etc.—any seasonal vegetables you like. The rabbit cooks almost in its own juices, resulting in a delicious sauce. This recipe is perfect for those who don't have other cooking options, but if you have an oven, you can bake the rabbit exactly the same way. Definitely save this recipe for later.

Prepare all the ingredients from the list.

Rinse the rabbit and soak it in cold water for 1-2 hours. Regular water can be replaced with sparkling mineral water, milk, or buttermilk. Soaking will make the meat more tender and soft, and also help eliminate any unpleasant odor, which is sometimes present in wild hares. If you have a young rabbit and a fresh carcass, the meat can be cooked without soaking.

Rinse the rabbit, dry it, and cut into pieces. If desired, you can lightly tenderize the meat beforehand.

Add mustard, mayonnaise, adjika, crushed garlic, salt, and spices to taste.

Mix thoroughly and let the rabbit marinate for at least 2-3 hours; I leave it overnight.

Cut the vegetables into pieces of any size, but not too small, otherwise they will turn into mush during the long cooking process.

Add vegetable oil, salt, and pepper to taste. Mix well.

Place the vegetables in the pot as the first layer.

Place the remaining potatoes, onions, and carrots on top of the meat. You can confidently fill the pots to the top, the main thing is that the lid closes tightly.
