1. Cut the rabbit into large portion-sized pieces. Place in a saucepan, add wine vinegar, one minced onion, 3 tbsp of oil, minced garlic, chili pepper, oregano, and bay leaf.

2. Let it marinate for at least two hours, or longer if possible. Then take out the pieces and fry them on all sides in flour.

3. Now, directly in the same pot, pour in the wine, add broth, oregano, herbs, and salt to taste. Simmer over low heat until done.
