
Rabbit in a Smoker
Description
Suitable for both holidays and everyday meals. Today we will smoke rabbit. Gut the rabbit, remove the skin, rinse it, and rub with salt and pepper. Marinate for about 40 minutes, then place it on the smoker rack and smoke over fruit wood chips for one hour. Cut the finished smoked rabbit meat into portions and serve at the table with a side dish and fresh herbs. Serve the appetizer to the table.

Remove the skin from the rabbit, gut it, and rinse. Pat dry with paper towels.

Rub the carcass inside and out with salt and pepper and leave it to marinate for 35–40 minutes. Then place it on the smoker rack.

For smoking rabbit, fruit tree wood chips or alder work well. Soak them for 15–20 minutes, then spread them on the bottom of the smoker. Light the fire.

And smoke the rabbit until done. This will take about an hour. Then cut the meat into portions and serve with a side dish and fresh herbs.
