First, cut the carcass into portion pieces, rinse them, and dry with a paper towel. Then coat the pieces on all sides with mustard.

Pour vegetable oil into a saucepan and place over heat. Sear the pieces of meat on all sides until golden brown.

Then transfer them to a heavy-bottomed pot or casserole dish, cover with a lid to keep them from cooling.
