
Rabbit stewed in the oven
Description
The recipe won't take much time. You can buy rabbit already dressed or whole. In stores, it's often sold without the head and gutted, so you just need to wash and cut it up. There are several proven cooking methods, for example, with sour cream, with mustard, or in wine. I cook rabbit in a cauldron, but you can also use a thick-bottomed pot. Serve hot.

1. Peel all the onions (I have small heads). Cut them in half and cover with cold water, leaving them for some time to remove the bitterness.

2. I wash and cut up the rabbit. I coat it in flour and fry in a pot with olive oil, garlic, bay leaf, and cinnamon until golden brown, then transfer it to a plate.

3. Without removing the pot from the heat, pour in the wine and water, reduce the liquid while scraping off the accumulated fat. Return the rabbit to the pot, add all the onions, tomato paste, salt, and pepper, and bring to a boil.

4. Remove the pot from the heat, place it in a preheated oven at 175-180 degrees for 90 minutes. Take the pot out, adjust the seasoning to taste, and return it to the oven for another 30 minutes. Serve the rabbit with onions and the resulting sauce.
