
Rabbit stewed with onions

Sear the rabbit pieces on both sides in vegetable oil over high heat. Once a light golden crust forms, transfer the rabbit to the container in which you will braise it.

Reduce the heat to medium. Slice the onion into half-rings and sauté in a skillet with vegetable oil for about 4-5 minutes.

Add the flour to the onion and sauté for another minute. Add the broth or water and, stirring, bring to a boil. Then pour the fragrant mixture over the rabbit. It should completely cover the meat. If necessary, add more water. Also add 2 strips of lemon zest and squeeze the juice from the lemon.

Bring the dish to a boil, season with salt, and simmer over low heat for 1.5–2 hours. When the meat is tender enough, remove it from the bone and return to the broth for a few minutes. Serve with sour cream, fresh herbs, or capers.
