Instructions

Step 1

Wash the rabbit carcass and chop it into small pieces with a cleaver. Soak the meat for several hours in cold water with vinegar to make it tender and remove any unwanted odors.
- 2
Step 2

Pour refined vegetable oil into a cauldron and place it over heat. When the oil heats up, add the rabbit to the cauldron. Fry the pieces on all sides until golden brown.
- 3
Step 3

Peel the onion and cut it into large cubes. You can use any variety of onion; shallots, Crimean, or white salad onions will also work.
- 4
Step 4

Peel the carrot and grate it on a grater. Choose brighter root vegetables, as they have a higher content of carotene, which is so beneficial for our body.
- 5
Step 5

Add the chopped onion and carrot to the rabbit in the cauldron. Also add sour cream. It's better to use sour cream with high fat content, at least 20 percent. Strip the rosemary leaves from the sprigs and throw them into the cauldron. Season the dish with salt.

Step 6

Add whole peppercorns of different peppers to the meat. Pour in a glass of water, reduce the heat, and simmer covered for at least an hour and a half. If necessary, add water during cooking. Serve the dish with a side or without, but always hot.
