
Rabbit with rosemary
Description
The recipe won't take much time. Rabbit meat combined with aromatic spices is incredibly delicious! I immediately prepared a side dish. Soft baked pumpkin was a perfect match. You could also cook some lentils. But everything depends on your taste. Even regular baked potatoes would work well here. Serve hot.

Rinse rabbit legs and pat dry. Season them with salt and pepper. Place rosemary on top, then vacuum-seal the meat. Cook the rabbit in vacuum for 1-2 hours. The longer it cooks, the more tender the meat will become.

Peel the pumpkin and remove the seeds. Preheat the oven to 225 degrees.

Cut the pumpkin flesh into small cubes.

Transfer the pumpkin to a baking dish. Add 2 tablespoons of olive oil, salt, and pepper. Mix well. Bake the cubes for 15 minutes. Then add chopped rosemary and cook for another 15 minutes.

Rinse the lentils and pour 3 cups of water over them. Add half a sprig of rosemary. Bring the water to a boil.

Cook the lentils under a lid for 25 minutes over low heat.

Drain the water from the cooked lentils. Then add salt, pepper, and olive oil.

Wipe the rabbit with a paper towel. Then coat it with baking powder.

Heat the vegetable oil for deep frying. Put the rabbit legs into it.

Sear the meat until golden brown for just a couple of minutes.
