
Rabbit with pomegranate
Description

Prepare all the ingredients.

Rinse the rabbit carcass, dry it, and cut into portion pieces.

Transfer to a deep bowl, add salt, spices, mustard, and lemon juice. Mix well and let marinate for 2–3 hours, or cover the bowl with plastic wrap and leave overnight.

Heat a skillet with vegetable oil, add the rabbit pieces, and sear on high heat on all sides until golden brown.

Add the broth, bay leaf, and sliced garlic cloves. Cover the skillet with a lid and simmer the rabbit over low heat for 50 minutes. If necessary, you can add a little more meat broth during cooking.
