
Rabbit in sauce
Description
The recipe won't take much time. To prepare rabbit in sauce, you'll need a fresh medium-sized rabbit, a pot (or casserole dish) suitable for baking in the oven, and for the sauce—sour cream and French mustard. By the way, you can simply simmer it on the stovetop in the pot if you don't want to turn on the oven. Soak the rabbit in water with added lemon juice for about half an hour beforehand. Pour vegetable oil into a frying pan. Peel the garlic and crush the cloves with a wide knife. Place the garlic on the heated pan and sauté slightly to release its aroma, then remove the garlic.

Take out the previously soaked rabbit carcass from lemon water, pat it dry with a paper towel, and cut into portion pieces. Place the rabbit pieces onto a frying pan.

The rabbit meat should be fried until golden brown. Then place it in a cauldron or a deep pot.

Slice the onion into rings and grate the carrot on a coarse grater. First, sauté the onion in the pan where you fried the rabbit.

Then add carrots to it and sauté together.

Then add the flour to the vegetables, mix well, and fry until the flour turns golden.

Pour in the sour cream and mix. Add 400 ml of hot boiled water. Place bay leaf and mustard into the sauce. Salt and pepper to taste.

Bring the sauce to a boil and simmer over low heat for 5 minutes, stirring.

Preheat the oven to 190 degrees. Pour the sauce over the rabbit in the pot, cover with a lid, and bake for one hour.

You can serve the ready rabbit with sauce alongside fresh vegetables, wine, and any side dish.
