
Rabbit hunter-style
Description
The recipe won't take much time. Hunter's rabbit is a fragrant, hearty, and original dish. Let's face it, we rarely cook rabbit. It should be seared first, then simmered in a wonderful sauce made of vegetables and spices. The side dish is classic: baked potatoes in the oven. Serve hot.

1. Thoroughly rinse the rabbit and cut it into pieces (6-8 pieces).

2. Season the rabbit pieces with salt and pepper.

3. Dredge the rabbit pieces in flour.

4. In a pan over medium-high heat, sear the rabbit pieces on all sides in butter until golden brown.

5. Peel the onion and cut it into quarter rings.

6. Wash the celery, carrots, parsley, and mushrooms. Slice the carrots into rounds, chop the celery and parsley. Cut the mushrooms in half or into 3-4 pieces, depending on their size.

7. In a large high pot, sauté the onion and minced garlic in butter until soft, then add the celery and carrots and cook, stirring, for another 5 minutes. Add the sautéed rabbit to the pot, pour in the wine, and add some chopped parsley. Simmer for 10 minutes.

8. Add rosemary and sliced mushrooms to the pot. Increase the heat to high and simmer for 5–7 minutes, until the liquid has reduced by half.

9. After 5-7 minutes, add the cherry tomatoes to the pot. The rabbit with vegetables should be completely covered with liquid; if there is not enough, add some water.

10. Gently stir, reduce the heat to low, cover with a lid, and simmer for 40 minutes, stirring occasionally and adding water if necessary.

11. While the rabbit is stewing with the vegetables, prepare a potato side dish. Peel, rinse, and cut the potatoes into cubes. Boil them in salted water. Then place them on a greased non-stick baking sheet. Season with salt and pepper, add a little water, and sprinkle with poppy seeds and grated cheese on top. Bake in a preheated oven at 180 degrees for 15 minutes.

12. Serve the rabbit with potatoes and the sauce in which it was stewed. Game-style rabbit is ready!
