
Spanish-style rabbit
Description
The recipe won't take much time. If you want to prepare an original dish for a holiday, Spanish-style rabbit is just the one! It will, of course, require some skill and patience, but it's worth it. Be sure to use plenty of spices: cloves, nutmeg, coriander, basil—the more, the better. I often just add a mixture of Mediterranean herbs. To prepare Spanish-style rabbit, you'll need a whole rabbit, about 1.3 kilograms, which should be marinated in cider overnight in advance. See the detailed recipe. Serve hot.

Prepare the ingredients.

Wash the vegetables and chop them coarsely.

Finely chop the bacon, fry in butter and vegetable oil. Add rosemary and thyme to it.

Fry until the bacon becomes crispy, then set aside on a plate.

Now fry the vegetables (by the way, it's best to cook in a kazan—a cauldron—so you can both fry and braise in it).

Place the rabbit on top.

On top, place garlic and lemon slices. Also add spices.

Dissolve the Knorr cube in water and add the resulting broth to the meat, along with the cider in which it was marinated. The liquid should come halfway up the meat.

Cover the cauldron with a lid and simmer over low heat for about 80 minutes. Meanwhile, boil the potatoes.

Wrap boiled potatoes with bacon strips and fry in vegetable oil until golden brown.

Serve the ready Spanish-style rabbit, garnished with basil sprigs, with potatoes. You can also serve a glass of red wine with the dish. That's it!
