Description

The dish is prepared without unnecessary complications. Serve French-style rabbit with rice, porridge, dumplings, or mashed potatoes. Preparation: Cut the front part of the rabbit into pieces. Rinse the offal and cut into medium-sized pieces. Heat the fat in a pot. Add the rabbit and offal to the pot and fry. Cut the bacon into thick slices. Chop the onion into large cubes. Add the bacon and onion to the meat, cover with a lid, and simmer over low heat, adding water as needed. When the meat becomes tender, season with salt, add whole peppercorns, bay leaf, red pepper, and wine. Continue simmering until fully cooked. Before serving, sprinkle with chopped parsley. The dish is now ready to be served.
