
Rabbit gypsy-style
Description
Rabbit meat is the healthiest meat! Plus, it's also very delicious! I'm a mother of many children, and I actually started raising rabbits specifically for my kids, so we cook it often. And this rabbit recipe is our absolute favorite! It's loved by both adults and children! The rabbit is stewed in white wine (don't worry about the wine—alcohol completely evaporates during cooking). Then canned tomatoes in their own juice, olives, and garlic are added, and everything continues to simmer, now with broth, making the meat incredibly tender and soft! I highly recommend everyone try this dish.

Peel the onion and cut it into cubes.

Sauté briefly until translucent in a mixture of oils.

Cut up the rabbit. The best parts for this dish are the rabbit legs.

Add the rabbit meat to the onion and fry for 3 minutes on each side.

Salt, pepper, add wine, and simmer the rabbit until the wine has evaporated.

Add the tomatoes, pour in the broth, and simmer over low heat for about an hour.
