
Spinach and Cheese Croquettes

Thaw the spinach and squeeze out the liquid thoroughly.

Then cut the spinach with a knife, but do not mince it.

Brown a heaping teaspoon of flour in olive oil, add the milk, and whisk thoroughly so there are no lumps. Add salt (remember that the cheese is salty too), nutmeg, and black pepper. Cook until the sauce thickens, stirring constantly.

Add the spinach to the sauce and stir. Cook for another 3–4 minutes, letting a little more liquid evaporate from the spinach.

Add finely grated cheese and mix.

Transfer the resulting mixture into a bowl. This is the base for our croquettes. Let it cool.

Then, using a teaspoon, divide the mixture into portions and place them on a flat plate. If the mixture is too soft, put it in the freezer for 10–15 minutes.

Put vegetable oil in a small saucepan and let it heat up. Prepare the batter. Beat the egg with a tablespoon of flour into a smooth mixture.

Coat the spinach-cheese mixture in flour.

Then in egg batter.

And coat in breadcrumbs.

This is how we will prepare all the croquettes. I ended up with 12 pieces, each about the size of a walnut.

Fry the croquettes in hot oil and transfer to paper towels to absorb the excess oil.

Some of my croquettes leaked—the coating was broken. So before dropping the croquettes into the boiling oil, check that you’ve breaded them well. You can dip them in the batter and breadcrumbs again.
