
Cretan salmon
Description
Fried salmon in yogurt with tomatoes and feta sauce

Finely chop the leek and shallot.

Cut the salmon fillet into 2 cm cubes, keeping only the flesh and removing the skin and bones.

Pour olive oil into a frying pan, add chopped shallot, salt, and pepper. Cook the vegetables for 1–2 minutes over medium heat.

Then add the sliced leek and mix well. Sauté lightly so that it remains bright and green. Remove from heat.

Pour olive oil into a frying pan and, as soon as it becomes hot, add the fish. Fry for 2–3 minutes until the cubes turn brownish on the sides. Remove the salmon from the pan onto a plate and set aside.

Place the pan back over medium heat and add the feta, cut into small pieces. Stir until the cheese has melted.

Add yogurt and tomato paste, bring everything to a boil, stirring occasionally.

Return the salmon cubes to the skillet and stir gently. Add the juice of ½ lemon, if desired. Remove from heat.

Place a layer of onion on a plate, add the salmon, and pour the sauce over the fish. Serve immediately.
