
Shrimp Baked in Sauce
Description
A tasty appetizer for any gathering. I usually serve shrimp with a citrus sauce or a creamy one; I recently made shrimp with tomato sauce—the way they traditionally prepare them on Crete. I really liked the flavor of the finished dish. The shrimp turned out juicy, aromatic, and interesting. I serve them without a side dish, with slices of white bread and fresh herbs.

1. I wash the tomatoes, make cross-shaped cuts, and pour boiling water over them. I leave them for 2 minutes, then peel off the skins. I puree the peeled tomatoes into a smooth mixture.

2. I add spices (dried oregano and basil) to the tomato purée, peel the garlic and press it through a garlic press, and add it to the purée.

3. I put the feta in a bowl and mash it with a fork into small pieces, then add it to the tomatoes.

4. I peel the onion, rinse it under running water, and dice it into small cubes.

5. I pour olive oil into a sauté pan, heat it well, and fry the onion until golden.

6. I transfer the prepared onion to the sauce and mix well.

7. I place the thawed and lightly parboiled shrimp (small) in the baking dish.

8. I carefully pour the prepared tomato sauce over the shrimp and arrange the large peeled shrimp.

9. I wash and finely chop the parsley (other greens may be used), and sprinkle the dish with it.

10. I put the shrimp in an oven preheated to 170–180°C for 30 minutes.

11. I serve the shrimp with slices of white bread so you can dip them in the leftover sauce.
