
Shrimp with tomato seasoning
Description
Soak 20 wooden skewers in a pot of water for 30 minutes. In a bowl, mix together garlic and ginger. Transfer half of this mixture to a large bowl and stir in 2 tablespoons of oil. Add the shrimp, toss to coat evenly, then cover and refrigerate for 30 minutes. Cover the remaining garlic-ginger mixture and refrigerate separately. Preheat the grill and lightly oil the grates. In a bowl, toss tomatoes with the remaining oil and season with salt and pepper. Grill the tomatoes cut-side up—4 to 6 minutes for plum tomatoes, 8 to 10 minutes for green tomatoes. Once cooled, peel and remove the seeds from the tomatoes. Finely chop the tomato flesh and add it to the bowl with the reserved garlic-ginger mixture. Stir in lime juice, jalapeño, sugar, cilantro, and basil. Season the shrimp with salt and pepper. Thread the shrimp onto the prepared skewers. Grill for about 2 minutes per side. Arrange the grilled shrimp on a serving platter and serve with the tomato sauce.
