
Shrimp and bacon with grain
Description

Step 1

1. Press the garlic using a garlic press. Finely chop the onion. Grate the cheese. Place the bacon slices on a baking sheet. Put the baking sheet into a cold oven, then heat the oven to 200 degrees and cook the bacon for 15 minutes on each side until done. Let the bacon cool, chop the bacon slices into small pieces, and drain the fat from the baking sheet into a bowl.

2. In a saucepan, bring 2 cups of water, broth cubes, butter, and grits to a boil. Reduce heat to low and simmer for about 7 minutes, until the grits become thick and tender. Remove from heat and mix in grated cheese.

3. Add 1-2 tablespoons of fat left from baking bacon to a medium skillet; heat over medium heat. Add shrimp with a generous amount of Cajun seasoning. Cook until shrimp turn pink, about 1 minute per side. Reduce heat to medium-low and add bacon, onion, garlic, and a bit of lemon juice. Cook for another 1-2 minutes, until onion and garlic are soft and shrimp are fully cooked.
