1. Sift flour into a bowl, add sugar and salt, then crack in the eggs and mix. Gradually pour in the milk and cream at room temperature, add the previously melted and cooled butter, and pour in the beer. Mix well with a whisk and let it stand for 30 minutes.

2. For the filling, peel 4 oranges and remove all the membranes and seeds. If the segments are thick, cut them into thinner pieces with a sharp knife.

3. Pour a little sunflower oil onto a hot skillet, heat it up, ladle in the batter, and fry the pancakes on both sides until golden brown.

4. Place orange slices into each pancake and fold them into a parcel.

5. For the sauce, mix softened butter, zest of two oranges and juice of one orange in a bowl, add sugar and juice of half a lemon. Stir everything, then transfer to a saucepan and place over heat. Simmer over low heat until boiling.

6. Place the crepes into the finished sauce and turn the heat to maximum. Carefully flip the crepes after a minute, then simmer for a few more seconds. Repeat this process with all the crepes. Transfer the cooked crepes onto a plate and serve.
