Spinach Cream

Description

The appetizer is quick and easy to prepare. In a large pot, bring salted water to a boil. Add the spinach and cook for about 1 minute. Drain in a colander and rinse the spinach with cold water. Squeeze the spinach to remove as much liquid as possible. In a large saucepan over low heat, melt the butter. Add the onion and garlic, season with salt and pepper. Cook, stirring, until the onion is soft, 3 to 5 minutes. Add the cream cheese and milk, cook, stirring, until the cheese melts. Add the spinach. Cook over medium heat until the mixture thickens, 8 to 10 minutes. Add nutmeg, season with salt and pepper. Serve with herbs and sauce.
