
Blackcurrant Cream
Description
The dish is prepared without unnecessary complications. The black currant cream turns out not thick but very tasty, with a velvety texture. Children will happily enjoy the black currant curd with various baked goods. Don't forget to brew some aromatic tea, coffee, and other drinks. The ready dessert can be served.

Prepare the listed ingredients. For the cream, you can use either fresh or frozen berries. If you need to make a larger amount of cream, increase the ingredient quantities threefold.

Wash the blackcurrants in water, remove the stems and any debris. Drain the water and gently dry the berries with paper towels.

Transfer the berries to a cauldron or a saucepan with a non-stick bottom. Add granulated sugar and boil for about 15 minutes until slightly thickened, making black currant jam.

Carefully strain all the contents of the container through a sieve, removing the pulp. The pulp can be used to make a tasty tea or fruit drink. Pour the juice back into the saucepan.

Add a chicken egg yolk and whisk with a whisk. Place the container on the stove over medium heat. Stirring constantly, cook the cream until it slightly thickens, about 5-6 minutes. If the chicken eggs are small, you may need 2 chicken egg yolks!

Then add the butter to the cream and whisk it in with a whisk while the cream is still hot.
