Description
The quality of the caramels determines the preparation time and flavor of the cream. If the caramels are hard and chewy, they will take longer to melt compared to soft, crumbly ones. Caramels vary in sweetness, so for those with a sweet tooth, I recommend adding 70–100 grams of sugar. Mix the sugar with the flour at the initial stage of preparing the cream. "Iriska" cream works wonderfully with profiteroles and sponge rolls. Be sure to try it!

Pour the milk into a saucepan. Add the flour and whisk until no lumps remain. Then place over medium heat. Heat thoroughly.

Remove the thickened cream from the heat. Add butter and whisk until smooth and homogeneous.
