Combine the ryazhenka, kefir, and yogurt in a bowl, pour in the lemon juice, and stir with a spoon.

Line a colander with cheesecloth in 3–4 layers. Pour the mixture of ingredients into it and place a deep bowl underneath. Refrigerate for 36 hours.

The strained whey can be used for the dough. Yield of finished cream cheese: 200–250 g.
