Creamed honey with berries
Description
The dish is prepared without unnecessary complications. You can use fresh liquid honey for this recipe, but it should be left to stand for some time to begin the crystallization process. The honey will become slightly cloudy. The ready dessert can then be served.

Combine regular liquid honey and crystallized honey. Beat for several minutes. While beating, the honey will become fluffier and whiter.

Blend the berries into a puree and strain through a sieve to remove any seeds, if present. My berry mix contains raspberries, so removing the seeds is essential. Then, fold the berry puree into the whipped honey.

We get a light, fluffy mixture like this. When adding berries, the mixture will become liquid, but later it will thicken.

Pour into jars and store in the refrigerator.
