
Lavender and honey crème brûlée
Description
The dish is prepared without unnecessary complications. The famous creamy dessert with a caramel crust is enhanced with honey and dried lavender. The finished dessert can be served at the table.

1. Pour the cream and milk into a saucepan, add dried lavender. Bring to a boil and turn off the heat. Let it stand for about 15 minutes, until the milk takes on the aroma of lavender.

2. Meanwhile, whisk together egg yolk, 1/2 cup sugar, and honey in a separate bowl until smooth. Add the milk mixture and whisk again.

3. Strain through a fine sieve and remove the foam. Refrigerate for at least 4 hours.

4. Preheat the oven to 175 degrees. Fill 5-6 baking ramekins with the mixture.

5. Place the ramekins on a baking sheet and add enough hot water to reach halfway up the sides of the ramekins. Cover with foil and place in the oven. Bake for 40 minutes.

6. Remove the baking sheet from the oven and cool the crème brûlée in a water bath for 5 minutes. Cover with plastic wrap and refrigerate for several hours or overnight.

7. Before serving, sprinkle the top of the dessert with a thin layer of sugar and caramelize it using a special gas torch or by placing it under a preheated grill at maximum heat for 5 minutes, until the surface turns golden and caramelized.
