
Parmesan Cheese Crackers
Description
Perfect with tea and coffee. For topping these crispy crackers, use coarse salt, black pepper, sesame seeds, or poppy seeds as desired. Serve warm or chilled. Ideal with tea.

1. Finely grate Parmesan cheese. Preheat the oven to 200 degrees. Line a baking sheet with parchment paper or lightly dust with flour. Mix flour, salt, cheese, and butter in the bowl of a food processor until creamy.

2. Add about 1/4 cup of cream and mix again. If the dough does not hold together well, add a few more teaspoons of cream.

3. Roll out the dough on a lightly floured surface to a thickness of 6 mm or slightly thinner, adding flour as needed. Using a fluted wheel cutter or a cookie cutter, cut the dough into crackers.

4. Place them on the prepared baking sheet, 2.5 cm apart. Prick the entire surface of the crackers with a fork and sprinkle with salt, black pepper, sesame seeds, or poppy seeds, as desired. Bake the crackers until moderately browned, about 12 minutes.

5. Let the crackers cool on a rack; serve warm or at room temperature. Store the crackers in an airtight container for several days.
