
Classic crackers
Description
Delicious baked treat for the whole family. This cracker can be enjoyed on its own or used as part of an appetizer, served with a sauce or pâté. Serve warm or chilled. Perfect with tea.

Step 1

Sift the flour twice. The cracker recipe does not include baking powder, so the flour should be well aerated. Add salt, grated butter (on a coarse grater), and cheese to the flour.

Mix everything until crumbly. Pour in the milk. Add enough milk so the mixture starts to come together. The amount needed depends greatly on the flour's moisture. I can confidently use 100 ml of milk as a base, but the rest should be added gradually. I used about 150 ml of milk in total. Knead the dough thoroughly by hand or with a mixer, and do it quickly before the butter melts.

We'll end up with dough like this. There's no need to cool or partially freeze it. Divide the dough into 4 parts.

Roll out each piece of dough into a 1 mm thick sheet. Cut out cookies using cookie cutters.

Line a baking sheet with parchment paper. Place the crackers on it. Brush with beaten egg. Sprinkle with sesame seeds (sunflower seeds, flaxseeds, or spices). Preheat the oven to 200 degrees.

Bake the crackers in the oven for 12-15 minutes until lightly golden. Then remove from the oven. Place in a single layer on the table and let cool. Hot crackers piled together become soft and lose their crunch. The crackers must cool completely so that each cracker lies separately.

Serve the cooled cracker. You can additionally sprinkle with salt or spices.
