Description

Homemade baking for tea. I’m not particularly fond of ready-made store crackers, but these, made with whole-grain flour, I really enjoyed. There’s plenty of room for culinary creativity here—change the proportions and types of flour and toppings, and you’ll get crackers from your own unique recipe. The shape of the crackers is another playground for your imagination. Use this recipe as a base and bake for your pleasure. I didn’t count the crackers exactly, but it yielded more than 100 pieces.

    Prepare the ingredients.

    Pour 135 ml of water and 90 ml of vegetable oil into the bowl for kneading the dough.

    Mix the flour, salt, and yeast.

    Pour the dry ingredient mixture into a bowl and knead the dough. Depending on how moist your flour is, you may need extra water—about 30 ml. The dough should be firm but elastic. Cover the dough with plastic wrap and leave it in a warm place to ferment for 2 hours.

    To brush the crackers before baking, prepare an emulsion from a mixture of water and vegetable oil in equal amounts of 20 ml each. This recipe uses extra virgin olive oil.

    For ease of working with the dough, divide it into 2 parts.

    Roll the dough into a sheet about 3 mm thick. Using a cookie cutter or a special shaped knife, cut out crackers in whatever shapes you like.

    Arrange the crackers on a baking sheet and brush with the prepared emulsion.

    Sprinkle the crackers with sesame seeds, flax seeds, or dried herbs. Bake in the oven at 200°C for 12 minutes. While the first batch of crackers is baking, prepare the next batch.

    Whole-grain crackers are very tasty—you can’t help reaching for them. They’re also great with savory snacks and spreads, or as a base for canapés. You’ll love them—I’m sure of it!
