
Red pepper with cheese
Description
The recipe won't take much time. Choose red, meaty peppers for baking—they have a bright flavor that complements the creamy taste of the cheese. Use various spices and seasonings; you can add a little crushed garlic or finely chopped onion. If you like your peppers juicy, blanch the vegetable halves in boiling water for 2–3 minutes before stuffing.

Prepare the listed ingredients. It is best to use several types of cheese: hard Dutch-style and brined cheese. When adding brined cheese, omit the salt from the ingredient list. Rinse the peppers under water and pat them dry with a paper towel.

Grate two types of cheese on a fine grater. If you prefer, or if you don't have a grater on hand, you can cut them into small cubes instead.

Cut the bell peppers in half, stem included. Carefully remove the seeds without breaking the pepper halves. Spray a baking dish with vegetable oil and place the halves in it.

Fill them with grated cheese filling. Remember that the cheese will lose some volume, so fill them generously. You can lightly press the cheese mixture down with your hand or a spoon.

Preheat the oven to 180 degrees and place the baking dish on the middle rack. Bake the peppers for about 15–20 minutes, depending on their size, until the cheese topping is golden brown.
