
Salmon in creamy sauce baked in the oven
Description
The dish is prepared without unnecessary complications. Red fish is delicious in any form—whether fresh in rolls and sushi, boiled in soup, fried in a pan, or baked in the oven. Contrary to the common belief that fish shouldn't be combined with milk, red fish in cream is a classic recipe. The heat treatment does its job, making this dish fully digestible. The finished dish can be served at the table.

Prepare the fish. This time I decided not to bother separating the backbone myself, so I used ready fillets. I rinse the fish and cut it into pieces that are convenient to place on a baking sheet.

Let's prepare the creamy sauce. To do this, pour the cream into a bowl. Add salt, red and black pepper, and dried or chopped fresh herbs. Optionally, you can add mayonnaise, coriander, and other flavor enhancers. I'll also add a spoonful of mustard. Mix everything thoroughly.

Grease the baking sheet with vegetable oil. You can use more oil than you would for baking. Place the fish pieces tightly next to each other, then pour the creamy sauce over them. Add a few peppercorns and a bay leaf for aroma. Bake in the oven at 150 degrees Celsius for 40 minutes.

Red fish cooks quickly. It should be ready in half an hour in the oven, but I always wait a bit longer just to be sure. I like my fish slightly crispy. Place the cooked pieces onto plates and pour over the creamy sauce from the baking tray. Slice a lemon and chop some fresh dill. Red fish in creamy sauce is ready.
